Thank you Lord for the sky that's blue
and the sun so bright.
Thank you Lord for providing for me
a loving home and family.
Thank you Lord for the helping hands
of friends and volunteers throughout the lands.
Thank you Lord for listening ear
and the joy of knowing you are near.
Thank you Lord for giving to us
your words of wisdom, guidance, and the path
leading to happiness.

So as Thanksgiving Day draws near
and we sit at our table with those so dear
PLEASE don't forget to invite our Heavenly
Host for he is the one we give thanks to most.

Greetings From The Heart Thanksgiving

Twas the Nite of Thanksgiving

Twas the Nite of Thanksgiving
But I just couldn't sleep
I tried counting backwards,
I tried counting sheep.

The leftovers beckoned -
The dark meat and white
But I fought the temptation
With all of my might

Tossing and turning
With anticipation
The thought of a snack
Became infatuation.

So, I raced to the kitchen,
Flung open the door
And gazed at the fridge,
Full of goodies galore.

Gobbled up turkey
And buttered potatoes,
Pickles and carrots,
Beans and tomatoes.

I felt myself swelling
So plump and so round,
'Til all of a sudden,
I rose off the ground.

I crashed through the ceiling,
Floating into the sky
With a mouthful of pudding
And a handful of pie.

But, I managed to yell
As i soared past the trees....
Happy eating to all -
Pass the cranberries, please.

May your stuffing be tasty,
May your turkey be plump.
May your potatoes 'n gravy
Have nary a lump,

May your yams be delicious
May your pies take the prize,
May your thanksgiving dinner
Stay off of your thighs.

Happy Turkey Day

Sweet Potato Casserole with Bacon

INGREDIENTS

  • 4 large sweet potatoes, quartered
  • 4 slices bacon
  • 3 tablespoons butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup light cream
  • 1/4 cup milk
  • salt and ground black pepper to taste

DIRECTIONS

  1. Preheat an oven to 325 degrees F (165 degrees C). Grease a 2-quart baking dish; set aside.
  2. Place the sweet potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry until cool enough to handle.
  3. Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Chop the bacon coarsely; set aside.
  4. Slip the skins off the potatoes and discard; blend the potatoes in an electric blender or food processor until smooth. Stir in the butter, cinnamon, nutmeg, cream, and milk. Mix well; season to taste with salt and pepper. Spread the potato mixture in the prepared baking dish.
  5. Bake in the preheated oven until heated through, about 18 minutes. Remove from the oven; sprinkle the potatoes with the bacon. Return to the oven and bake for an additional 5 minutes.
